THE NIGHT SHIFT FERMENTS
McKimchi
Fries first. Kimchi after. Questions at closing.
NIGHT WINDOW
Closing Shift
McKimchi takes the counter when the dining room goes quiet. He keeps one jar of sharp cabbage below the register and adds a red spoonful only after the fries stop steaming. Regulars ask for the paper bag with the warm corner. Nobody asks what happened to the breakfast menu. It is resting, apparently. At 2:13, the fryer beeps once and he nods back. The jar never appears on inventory.
Counter Rules
Three habits keep the late orders moving.
Hot Hand
The fries arrive forward, level, and well beyond reasonable personal space.
Jar Nearby
Kimchi waits under the counter in a crock marked for emergencies.
Bag Upright
Every order leaves standing tall, even when the customer does not.
Last order gets extra cabbage.
